strawberry, raspberry, cherry and lavender jam…

Homemade jam is special…and this jam is even more special because it is made with cherries, raspberries,… strawberries and lavender…

The sweetness of the berries will be enhanced with a mild lavender fragrance…it is simply my way of saving summer in a jar…

We need…
250 g of ripe cherries
250 g of strawberries
100 g of raspberries
400 g sugar
a small lavender twig and leaves….about the size of a thumb…

The proportion of fruit may vary and if you have more of one type of fruit than other, just go for it and you can be sure to get an equally flavourful result…just make sure you are using about 2/3 of sugar…

So, this is what we do: gently rinse the fruit and let it drain well….then remove the stems and pits from the cherries. In a pot, add all the fruits and sugar. Stir well with a wooden spoon, crushing some berries so as to bring out some juice from the fruit… leave to sit for a few minutes…(this prevents the sugar from caramelizing when you turn on the heat)…
Then cook the mixture of fruits and sugar, ….do not go too far…it is actually really quick…when it starts boiling, lower the heat….
You will know it is ready when you get a sort of foamy boiling texture…
…and last but not least… the twist that makes this jam reeeeealy special is: lavender!
Seconds before you turn off the heat, add the lavender leaf and allow it to scent the jam……and simply enjoy summer in a jar…
