Freezing eggs is particularly handy in households that have chickens. If you do, you will know they will lay more eggs than you can consume in spring and summer and become a bit lazier in colder months…

It is really an easy process: Crack the eggs into a bowl and gently stir to break up the yolk. No need to beat the mixture thouroughly, a quick stir will do…

It’s best to freeze eggs in small quantities so you can thaw only the amount you need. An easy way to do this is to put the egg mix in an ice cube tray. Once frozen, pop them into a freezer bags, this will allow you to have small egg-cubes ready for thawing. Like any frozen food, it is best to thaw eggs in the fridge and care must be taken to use thawed eggs in dishes that will be thoroughly cooked…you never know…
They can be kept in the freezer for a year.
